Cooked Vegetable Salad
We love to grill vegetables on the grill and make this delicious salad packed with vitamins and nutrients. It fits in many diets that people are doing now days. Whether you are a pescatarian, vegetarian, vegan or are on a keto diet this salad tastes great and will fit in your dietary restrictions.
Ingredients
- 3 medium eggplants (Italian)
- 3 medium bell peppers
- 3 medium tomatoes
- 1 shallot
- ¼ cup cilantro (chopped)
- ½ tsp smoked paprika
- ¼ cup avocado oil
- salt (to taste)
- ground black pepper (to taste)
Instructions
- Put all the vegetables (eggplants, bell peppers and tomatoes) on the grill on medium heat. You don’t want to burn the skin before the vegetables get a chance cook and get soft. Flip the vegetables every two minutes to cook evenly on all sides. Once the skin gets dark you can remove them from the heat. Tomatoes should cook a lot faster than the rest of the vegetables.
- Once the eggplants and the bell peppers are off the heat, put them in a ziploc (or a plastic bag) and put aside for 10 minutes. This allows the vegetables to cool down and helps to peal the skin much easier. There is no need to put the tomatoes in ziplocs because the tomatoes peal very easily.
- After you’re done pealing the vegetables put them in a strainer to get rid of the excess liquid the vegetables released.
- You can start chopping the shallot and the cilantro. Add the chopped shallot and cilantro in a bowl.
- Once the vegetables are well drained, chop and add them to the mixture.
- Add the avocado oil. Season with salt, ground black pepper and smoked paprika.
- Finally give it a taste, check if the seasoning is good before you serve. Enjoy!
Notes
Tips: The best part of this salad is that you can serve it hot or cold. Either way it tastes amazing. If you have leftovers, you can store it in a sealed container in the refrigerator up to 5 days. I like to pair this salad with pasta, quinoa, rice, buckwheat and many more dishes. If you don’t have the option to grill, you can roast the vegetables in the oven, it tastes just as good only without the smokiness.
