Breakfast Vegetarian Quesadilla
This is a tasty meal to have for breakfast or lunch. If you love eggs, mushroom and cheese this might become your favorite breakfast food. It is full of protein and nutrients, which is a great way to start your day especially if you have a long day ahead of you.
Ingredients
- 2 large flour tortillas
- 4 eggs
- 6 medium brown mushrooms
- ½ cup chopped green bell peppers
- 1 cup baby spinach
- 2 cups shredded mozzarella
- 3 tbsp avocado oil
- salt (to taste)
- ground black pepper (to taste)
Instructions
- Start by cutting the mushrooms into thin slices and set aside. Turn the stove on high heat, put the large skillet on the stove then add the avocado oil.
- Once the skillet is hot, add in the mushrooms and sauté until all the liquid has evaporated.
- Add the chopped green bell peppers, spinach and continue to sauté for two more minutes.
- Lastly add the eggs and let it cook until the eggs are ready.
- Take the omelette mixture out of the skillet and set aside.
- Turn the stove to medium low heat. Put one large flour tortilla and add one cup of shredded mozzarella. Spread the cheese evenly on the tortilla and put the omelette on top of the tortilla.
- Add another cup of the shredded mozzarella on the omelette and put the second tortilla on top.
- Once the tortilla is golden brown flip it and cook the other side until it is golden brown as well.
- Transfer the quesadilla onto the cutting board and cut into triangles.
Notes
Tips: Use none sick skillet. I like to serve this breakfast quesadilla with sour cream on the side and some avocado or guacamole. Enjoy!
