Avocado Shrimp Burger
If you’re pescatarian but miss eating hamburgers, this recipe will hit the spot. Give your taste buds a twist on a classic burger with a sriracha sauce and that unique texture you only get from shrimp. The only disappointing part of this burger is how quickly it disappears.
Ingredients
- 2 lb uncooked shrimp
- 1 medium green bell pepper
- 3 green onion
- ½ cup panko (Japanese break crumbs)
- 6 leaves lettuce
- 6 slices American cheese
- 1 avocado
- salt (to taste)
- ground black pepper (to taste)
Ingredients for Sauce
- 4 tbsp low calorie mayo
- 3 tbsp greek yogurt
- 1 small clove of garlic
- 1 tbsp sriracha
Instructions
- Start by finely chopping the shrimp and put it into the bowl.
- Cut the bell pepper into very small cubes and add it to the shrimp mixture.
- Also finely chop the spring onion and add it to the mixture.
- Add in the panco bread crumbs, the salt and ground black pepper.
- Mix everything together until everything is well combined.
- The mixture should be a little sticky, that’s the way we want it to be.
- Cover the mixture with a plastic wrap and put in the refrigerator for at least 30 minutes to rest.
- Take the mixture out of the refrigerator and start making patties.
- Now you are ready to put the shrimp patties on the grill and cook them about 2 minutes on each side, depending on how thick your patties are you might have to adjust the time on the grilling. Shrimp cooks very fast so be careful not to overcook.
Sauce
- Combine all the sauce ingredients together, mix well and set aside.
