Panko Fried Scallops
Craving something interesting but don’t have that much time, these delicious scallops take only 15 minutes to make. With just a few ingredients, you have a perfect dinner in no time.
Ingredients
- 1 lb scallops
- 1 egg
- ¼ cup all purpose flour
- 6 tbsp avocado oil
- ¼ cup panko (Japanese bread crumbs)
- ½ lemon
- salt (to taste)
- ground black pepper (to taste)
Instructions
- Pat scallops dry. Season with salt and pepper.
- Beat the egg and set aside
- Arrange the flour, egg mixture, and panko in three shallow dishes. Dust each scallop lightly with the flour (shake off excess flour), coat with the egg and after coat in the panko.
- Heat the oil in a large nonstick skillet over medium heat until it just begins to shimmer. Add the scallops and fry two minutes on each side or until golden brown. Plate and garnish with lemon slices.
Notes
Tips:
- Make sure you don’t overcook the scallops.
- I like to serve this dish with asparagus or any other vegetable. Since it’s already covered in breadcrumbs, you want to serve this with something light.
