
Potato & Brussels Sprout Side Dish
these potatoes & brussels sprouts go perfect with any protein. You can also enjoy it with just a simple green salad because brussels sprouts and potatoes have a surprising amount of protein. So no fish or meat, no problem! You are good for the day.
Ingredients
- 1 lb baby potatoes
- ½ lb brussels sprouts
- 6 tbsp soy sauce
- 1 tbsp hoisin sauce
- 3 tbsp cilantro (chopped)
- 1 small shallot
- 2 tsp sesame seeds
- 3 tbsp avocado oil
- salt (to taste)
Instructions
- Depending on how large your baby potatoes and brussels sprouts are, cut them into bite size pieces. If they are small, you can leave them as is.
- Turn the stove on to medium heat. Add the oil into a large skillet and begin to sauté the potatoes and the brussels sprouts.
- Sauté the vegetables for 5 min before you add in the soy sauce and the hoisin sauce.
- Once you added the soy sauce and the hoisin sauce, go ahead and season with the black pepper and one tsp of the sesame seeds.
- Sauté for 2-3 minutes and take it off the heat.
- Transfer the vegetables into the serving plate and garnish with the shallots, chopped cilantro and the rest of the sesame seeds.
Notes
Tips:
- Don’t overcook, otherwise the potatoes and the brussels sprouts will get mushy.
- Garnish right before you serve it. You want your cilantro and shallots to look fresh.
