Purple Cabbage Salad
The Purple Cabbage is packed with a ton of nutrients important for our bodies. Since we have easy access to this nutrient-dense vegetable, we should start using it a little more often. Having said that, I want to introduce you to this delicious but very simple salad. It tastes just as amazing the next day.
Ingredients
- 1 lb purple cabbage
- 1 medium carrot
- ¼ cup cilantro (chopped)
- ¼ cup parsley (chopped)
- 2 green onions
- 5 tbsp avocado oil
- 2 tbsp apple cyder vinegar
- ½ squeezed long juice
- salt (to taste)
- ground black pepper (to taste)
Instructions
- Shred the cabbage and the carrot into thin strips.
- Chop the cilantro, parsley and the green onion as fine as you can.
- Add the oil, vinegar and lemon juice to the mixture.
- Finally, season with salt and back pepper.
- Mix everything very well until the cabbage starts to soften a little.
Notes
Tip:
- Wear a glove and mix the salad with your hand for quicker and better result.
- You want to squeeze the cabbage a little bit to release some of its liquid and become softer.
