Baked Cauliflower With Pesto And Cheese Sauce
A beautiful way to serve a cauliflower for your upcoming dinner party. The cheese sauce takes it to a whole new level. The texture of the cauliflower goes so great with the soft cheesy sauce. The basil pesto gives it a fresh and unique flavor. The best part is, you can serve it with any protein.
Ingredients
- 1 medium whole cauliflower
- 1 cup basil pesto
- ¼ cup shredded Parmesan cheese
- 4 basil leaves
Ingredients for Sauce
- 2 tbsp avocado oil
- 1 cup cream cheese
- 3 tbsp sour cream
- 2 tbsp ricotta cheese
- 2 cups shredded Mozzarella cheese
- ¼ tsp black pepper
- salt (to taste
Instructions
For Cauliflower
- Add 3 tbsp of the pesto inside the cauliflower.
- Place a parchment paper on a baking pan and place the cauliflower on top. Add the remaining pesto on top of the cauliflower and make sure everything is well covered.
- Pre-heat the oven to 415F and roast the cauliflower for 45-50 minuets.
- Once out of the oven shred the Parmesan cheese.
Instruction for the Sauce
- Turn the stove on medium heat. Add 2 tbsp oil in a large pan.
- Add the cream cheese, sour cream, ricotta cheese, mozzarella cheese and continue stirring until everything is dissolved. Season with black pepper and salt and take it off the heat.
- Transfer the cheese sauce onto the serving plate and place the roasted cauliflower on top of the sauce.
- Decorate with basil leaves before you serve.
