Shrimp Spring Rolls
These fresh and healthy Vietnamese spring rolls are made with shrimp, vegetables, herbs, and rice noodles wrapped in rice paper. Generally spring rolls are served with hoisin sauce or peanut sauce. I prefer peanut sauce but you can choose either one.There is a variety of ways you can make spring rolls. You can make them with your favorite vegetables and protein but make sure to add some type of herbs, cilantro and mint are ideal.
Ingredients
- 11 oz rice noodles
- 6 rice papers
- 10 oz steamed jumbo shrimp
- 4 lettuce leaves
- 2 medium cucumbers
- 3 oz mint
- 1 avocado
- 4 oz peanut sauce
Instructions
- Soak the rice noodles in a hot water for 10 minutes. After 10 minutes rinse in a cold water and drain.
- Cut the avocado and cucumbers into long strips.
- Separate the mint leaves.
- Cut the lettuce into long pieces.
- You can either cut the shrimp into two pieces or leave it whole.
- Soak the rice paper in a bowl of water for about two seconds and place it on the board.
- Add 4 pieces of shrimp and small portion of rice noodles on the rice paper. Then add two pieces of avocado, two pieces of cucumbers, lettuce and mint leaves. Fold both sides of the rice paper and gently roll the rice paper.
