Artichoke Pasta Salad
As the weather gets warmer, easy pasta salads are the perfect addition to picnics and summer get togethers. This Artichoke Pasta Salad is always a crowd favorite loaded with artichoke, cherry tomatoes, mozzarella cheese, Greek olives and fresh herbs.
Ingredients
- 5 cups pre-cooked pasta (sea shell or other small pasta)
- 1 medium shallot
- 1 cup fresh mozzarella cheese
- 1 cup canned artichoke
- 1 cup cherry tomatoes
- 1 cup cilantro and dill (chopped, half & half)
- 1 cup Greek olives
- 5 tbsp olive oil
- sea salt (to taste
- ½ tsp ground black pepper
Instructions
- In a medium bowl add the cooked pasta.
- Cut the shallot into moon shape pieces and add to the bowl.
- Next, cut the artichoke, cherry tomatoes and mozzarella cheese to about the same size. You want to make sure all the ingredients are pretty much the same size. You don't want large variety in sizes.
- Depending on how big the olives are, you can cut them in half or leave them as is.
- Chop the herbs as fine as you can.
- Finally season with salt and black pepper.
- Add the olive oil and give it a gentle toss.
