As the weather gets warmer, easy pasta salads are the perfect addition to picnics and summer get togethers. This Artichoke Pasta Salad is always a crowd favorite loaded with artichoke, cherry tomatoes, mozzarella cheese, Greek olives and fresh herbs.
5cupspre-cooked pasta (sea shell or other small pasta)
1mediumshallot
1cupfresh mozzarella cheese
1cupcanned artichoke
1cupcherry tomatoes
1cupcilantro and dill (chopped, half & half)
1cupGreek olives
5tbspolive oil
sea salt (to taste
½tspground black pepper
Instructions
In a medium bowl add the cooked pasta.
Cut the shallot into moon shape pieces and add to the bowl.
Next, cut the artichoke, cherry tomatoes and mozzarella cheese to about the same size. You want to make sure all the ingredients are pretty much the same size. You don't want large variety in sizes.
Depending on how big the olives are, you can cut them in half or leave them as is.
