Pineapple Fried Rice With Shrimp
This Pineapple Fried Rice recipe is festive yet simple at the same time
Ingredients
- 12 oz Jumbo shrimp 350g
- ⅛ tsp white pepper
- 1 tbsp soy sauce
- 1 medium hollowed out pineapple
- 1.5 cups pineapple inners
- 3 eggs
- 4 tbsp avocado oil
- ½ medium onion (chopped into cubes)
- 1 medium carrot (chopped into cubes)
- 4 cups cooked rice
- 1 cup corn
- 1 cup edamame
Ingredients for the sauce
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp sriracha sauce
- ⅛ tsp white pepper
- 1 large garlic clove (finely chopped or grated)
- 1 tbsp ginger (finely chopped)
Instructions
- First things first, start by marinating the shrimp. Add 1 tbsp soy sauce, 1/8 white pepper on the Jumbo shrimp. Give it a quick mix and set aside until you prep the rest of the ingredients.
- Let's start prepping the pineapple. Cut the pineapple into half and dig out all the pieces leaving just the shell. Set aside 1.5 cups of pineapple and chop them into small cubes. Keep the rest of the pieces for a delicious smoothie
- On to the sauce. In a cup, add the soy sauce, oysters sauce, sriracha sauce, white pepper, grated garlic and chopped ginger. Give it a quick mix and set aside.
- In a large pan, add the avocado oil. Once the oil is hot, add 3 beaten eggs and fry. Take the omelette off the heat and cut into small pieces.
- In the same pan add a bit more oil and sauté the marinated shrimp 1minute on each side. Take it off the pan and set aside.
- In the same pan add the chopped onions, chopped carrots and sauté until they are translucent. Once translucent add the shrimp back, then the cooked rice, corn, edamame, pineapple, the sauce and the omelette. Give it a gentle mix until everything is covered in the sauce and take it off the heat.
- Transfer the mixture into the 2 pineapple boats. Enjoy

Notes
Tips:
- Cut the bottom of the pineapple just a little bit, so the boats stay steady and doesn’t roll when they are moved.
- Serve warm on a side of green salad.
