Breakfast Burrito (Omelette)
Is it an omelette pretending to be a breakfast burrito? Maybe. All I can say is it tastes great and looks even better. It takes just a few simple ingredients that most of us always have in our fridge and pantry to make this for breakfast or lunch.
Ingredients
- ½ tbsp butter
- 3 eggs
- 1 9in tortilla
- 1 cup baby spinach
- ½ cup shredded mozzarella cheese
- 1 green onion
- 1 tsp sour cream
- salt (to taste)
- ground black pepper (to taste)
Instructions
- Turn the stove on medium heat and put a 9 inch pan on the heat.
- Add the butter in the pan. While the butter is melting, beat the 3 eggs.
- Once the butter has melted, add the eggs in.
- Once you have added the eggs, dip the tortilla in the eggs and turn it over. Next add the spinach and the cheese. Close the lid and let it cook for about 30 seconds.
- Open the lid and flip the mixture half way and then all the way.
- Leave for about 15 seconds and transfer into the serving plate.
- Top with the sour cream and chopped green onions. Enjoy!

Tips:
- Serve right after you take it off the heat.
- You can also serve this burrito with guacamole instead of sour cream. Tastes just as delicious
