
Chocolate Coconut Cupcakes
Time to make decorative and delicious cupcakes. This is my families favorite combination of toppings and flavors. But you can change it up to make them as you like.
Ingredients
- 3 eggs at room temperature
- ¼ cup milk
- 4 tbsp melted butter
- ⅓ cup coconut flour
- ⅓ cup sugar
- ¼ cup cocoa powder
- 1 tsp vanilla extract
- ½ cup mixed chocolate chips white and dark chocolate
For Frosting
- 4 oz cream cheese at room temperature
- 1 tsp vanilla extract
- ⅓ cup sugar
- ¼ cup shaved coconut flakes
Instructions
- Combine the eggs, milk, vanilla extract and melted butter. Whisk everything together until well combined.
- In a separate bowl combine the dry ingredients: coconut flour, sugar, cocoa powder, baking powder. Mix until well combined.
- Now that both the wet and dry ingredients are ready, it's time to combine them together. Add the wet ingredients into the dry and whisk gently until everything is well mixed.
- Spray some cooking oil under the cupcake forms. Fill paper-lined muffin cups half full with batter. Top with some chocolate chips.
- Bake at 350° for 20-25 minutes or until a toothpick inserted into the cupcake comes out clean.
- Cool for 10 minutes, then remove from pan onto a wire racks to cool completely.
- While the cupcakes are baking, let's make the frosting. Combine the cream cheese, vanilla extract, sugar and mix until everything is nice and smooth.
- Once the cupcakes are ready and cool, frost them and top with some coconut flakes, chocolate chips or leave them as is. Enjoy!
