
Stuffed Cremini Mushroom
This recipe has four simple main ingredients: brown cremini mushrooms, bell peppers (I used yellow and red) but you can use only one color, onion and shredded mozzarella.
Ingredients
- 10 medium cremini mushrooms
- 2 medium bell peppers
- ½ medium onion
- 3 tbsp avocado oil
- 1 cup shredded mozzarella cheese
- 1 tbsp cilantro (chopped)
- salt (to taste)
- ground black pepper (to taste)
Instructions
- Start by washing the mushrooms and pat them dry.
- Take the stems out and chop the stems into very small pieces and set aside.
- Chop the bell peppers into small cubes and set aside.
- The onions also need to be chopped into small pieces.
- Turn the stove on to medium high heat and put the large pan on the stove.
- Add the oil and start sautéing the vegetables until the liquid has evaporated and the vegetables softened.
- In a baking pan, set the mushrooms stem-side up and stuff them with the vegetable mixture.
- Top the mushrooms with the shredded cheese and put them in a preheated400 F oven for 10-15 minuets.
- Sprinkle them with the chopped cilantro right before you serve it.
Notes
Tip: It’s better to serve it hot right out of the oven. Enjoy!
