This fritters recipe has become my daughter’s favorite. This will be a great recipe for mom’s that have kids that are picky eaters. If you can’t get your kid to eat green vegetables, I promise they will love this one.
Finely chop the potato into very small cubes or if its easier go ahead and grate it.
Drain the liquid from the potato before you add in the rest of the ingredients.
Chop the broccoli as well and add it to the drained potato mixture.
Crack one egg one the mixture.
Now it’s time to add in the dry ingredients. Flour, salt and the black pepper.
Mix everything well together until the mixture is well combined.
Put a large pan on medium high heat stove and add in the oil. Perfect way to check if the oil is hot, put a wooden spoon in the oil and if it starts to bubble it is ready to go.
Add in two tbsp of the mixture in the oil. Flatten it with your spoon and giving it a round shape. You can add more or less of the mixture, based on the size you want.
Once there is a golden crust, flip the fritter and fry until you get it golden on both sides.
Once you take the fritters out of the oil, place them on a pepper towel to get rid of as much oil as possible.
And lastly sprinkle with the chopped parsley to give it a beautiful green color.

Tip: You can serve this with a side of green salad, something very light. I like to serve my fritters with sour cream.
